These cookies are super soft, bursting with color and sure to be a crowd-pleaser!

3/4 c. butter

1 c.  granulated sugar

1 egg, plus 1 yolk

1 t. vanilla

1 t. baking soda

1/4 t. salt

1 (3.5-oz. package instant vanilla pudding mix)

2 c. all purpose flour

1/2 c. sprinkles

Preheat oven to 350 degrees. Beat butter and sugar on medium speed in a large mixing bowl. Add in the egg, vanilla, baking soda, and salt. Mix until combined, scraping the sides of the bowl as needed.

Add the dry pudding mix and mix for 30 seconds. Then, add in the flour, mixing on low, until just combined.

Finally add in the sprinkles (any shape, size or color!) and mix until incorporated evenly.

Using a medium (2 tablespoons) sized cookie scoop drop dough onto the prepared baking sheet 2 inches apart.

Bake for 8-10 minutes until the cookies are almost set. If you want super soft cookies, resist the urge to over-bake. If you like a little crunch, leave in an extra 1 minute.

Allow the cookies to cool on the baking sheet for 3 minutes before transferring to a wire rack to cool completely.

*Change up the sprinkle for a seasonal color at other times of the year or change the vanilla pudding out for a flavor (lemon, chocolate or pumpkin spice etc.) to make endless combinations!
