This easy sheet pan Lemon Garlic Butter Shrimp and Asparagus makes a very satisfying meal that tastes totally gourmet.  Keep some frozen shrimp around and you can make this tasty meal at a moment’s notice.


1 lb Frozen Shrimp

1 Bundle of Fresh Asparagus

1-2 T. Extra Virgin Olive Oil

1 t. Garlic Powder

1-2 Pinches of Salt and Pepper

½ t. Dried Parsley

⅛ t. Paprika

Red Chili Flakes to taste (optional)

3 T. Butter

1 ½ T. Lemon Juice

  • Defrost Shrimp. See tips below. Preheat oven to 400 degrees. Line a large roasting or sheet pan with foil, add your asparagus then toss with olive oil, garlic, salt and pepper. The roasting time will depend on the thickness of your asparagus. If using thin asparagus, roast for 4-5 minutes. If you have medium or thicker asparagus, then you’ll want to roast closer to 6 minutes (they will cook more after the shrimp is added).
  • After asparagus is tender, push to one side of the pan and add your raw fully-thawed shrimp. Drizzle shrimp with olive oil then toss with garlic, salt, pepper, paprika, red chili flakes and fresh parsley, then dollop the shrimp with 2 tablespoons of butter and the asparagus with 1 tablespoon butter.
  • Roast shrimp and asparagus for another 6 minutes and remove from heat when shrimp are a bright orange color. Drizzle with lemon juice.

The melted butter and lemon juice create a light and fresh lemon butter sauce that you can drizzle over rice or pasta.


There are two options for defrosting your shrimp.

Quick Thaw: place the one pound frozen shrimp in a fine-mesh sieve or colander. Place this sieve in a large bowl of cold tap water for 10 minutes. After 10 minutes, replace the water in the bowl with new cold tap water and resubmerge the shrimp. Let shrimp sit an additional 10- 20 minutes.  At this point the shrimp should be completely defrosted.

EZ Overnight Thaw: remove your one pound frozen shrimp and place in a covered bowl and let defrost in the refrigerator overnight.

*Whatever you do, resist the urge to use warm tap water (and definitely NOT the microwave) as this will cause the shrimp to defrost and cook unevenly.
