Good Eats



4 cups vegetable stock

2 cups water

1 cup pasta in your favorite shape

2 stalks diced celery

1 diced small yellow onion

2 diced gold potatoes

3 diced carrots

1 diced zucchini

2 cups chopped spinach (fresh or frozen)

1 can tomatoes

1 can green beans (drained)

1 large can kidney beans (drained)

1 large can navy beans (drained)

4 cloves minced garlic

2 bay leaves

3 tbsp fresh chopped parsley

2 tbsp Italian seasoning

Salt & pepper to taste



Combine all ingredients in your crockpot (minus the noodles) and cook on low for 7-8 hours or on high for 3-4 hours. Once dinner time is approaching, add the noodles and continue to cook 15-30 minutes until tender. Enjoy this heart-warming soup with your favorite crusty bread from the local bakery!
